Welcome to my blog. My name is Nicole-Kimberly.
I am a wife and mom of two girls. I am been a Vegan since 2015 (a Vegetarian for several years before that). For those of you who are not privy to Veganism, I describe it in detail in my section, Vegan 101.
This Blog Is For:
- For those who have been exclusively plant-based for many years. You are what I consider, Vegan Army Generals. You are the Warriors, Renegades, Gladiators, Bad Asses and are, by far, at the top of the Vegan Peking Order.
- For those who are like me – new to an exclusive plant-based diet (1-5 years in). We are the VPs, 2nd in Command, and Juniors of the Vegan World.
- For those transitioning, considering, or brand spanking new to a plant-based diet (less than a year). I salute you, because you have made an important commitment to your health and the environment. You uphold the title Vegan Army Private First Class. You’re the Rookies, still Green but fully committed.
What Can You Expect?
Expect that this platform will be a tool for are three types. Through my ongoing personal journey, I hope to inspire and serve as a resource through my experiences, tips, and recipes. I also want to be inspired and learn from you, so if you have recipes, tips, resources, or experience to share (i.e. improved health story), please feel free. The goal of this blog is to inspire and empower others in regards to their health and environment. I want to squash the myth that eating exclusively plant-based meals is insufficient in maintaining a healthy diet, difficult to maintain, tasteless, or time-consuming.
My Pledge
I promise to provide as many resources, tips, tested recipes, and support to those ALL, including those who simply want to eat healthier by adding more plant-based meals to the table.
