Woo-hoo! It’s finally here. Tomorrow is Friday. The weekend is within reach. You can feel good about spending an entire week eating and serving your kids wholesome, healthy, animal-free, dairy free, and guilt-free foods. Remember, these are suggestions meant to inspire and teach you that it is possible to be Vegan and actually add a flavorful, variety to your diet. Hopefully, your kids will ask for at least some of the items featured this week.
Snack:
Today’s snack is a treat for the kids. I usually limit sweet treats/desserts to the weekend in my house. Friday is the start of the weekend, so I decided to surprise them with animal crackers (cookies, in my mind). Try to find a variety that is Vegan and low in sugar. The brand listed below has about 6g of sugar per serving, but are low in fat and sodium. I paired these with raspberries because they were on sale. Raspberries, which are high in antioxidants and have anti-inflammatory benefits, are not my personal favorite, but my kids enjoy them.
Lunch:
Today’s lunch is packed with protein, vitamins, minerals, and flavor. It’s a Veggie Pinto Bean Burrito stuffed generously with: romaine lettuce, pinto beans, sweet red peppers, yellow grape tomatoes, and shredded carrots. All of this is snuggly wrapped in a spinach tortilla. This also works with other types of beans. A smear of refried beans is also a good option and serves as a great glue for your raw veggies. You can also add some rice to the mix. Your creativity is your compass. Usually, I use one big tortilla and cut it in half to be divided among my two girls because those tortillas are huge. As always, pair it with fruit if your kids have bigger appetites.
